Preparation Special Nihari Spices :
-Black Pepper (1 Tablespoon)
-Cloves (6-7 Nos)
-Cinnamon (4 Inch)
-Coriander Seeds (1 Tablespoon)
-Mace (2 Nos)
-Nutmeg (½ half) جائفل
-Black Cardamom (2 Nos)
-Fennel Seeds (1 Tablespoon) سونف
-Cumin Seeds (1 Teaspoon) زیرہ
-Turmeric Powder (1 Teaspoon)
-Red Chili Powder (2 Teaspoon)
-Kashmiri Red Chilli Powder (2 Teaspoon)
-Pink Salt (2.5 Teaspoon)
-Ginger / Sonth Powder (1 Tablespoon)
-Tatri / Citric Acid (¼ Tsp)
Chicken preparation:
-Cooking Oil (1 Cup)
-Onion's Finely Chopped (2 Big)
-Ginger & Garlic Paste (2 Tbsp)
-Whole Chicken Wings (1 Kg)
-Water As Required
-Chicken Flavour Powder (2 Tablespoon)
-All Purpose Flour / Maida (1 Cup)
-Water As Required (1 Cup)
-Ginger, Green Chili, Mint As Required

Instructions Nihari spices :
1. Dry Roasting: Begin by dry roasting the whole spices to enhance their flavors. In a pan, add coriander seeds, cumin seeds, fennel seeds, black peppercorns, cloves, black cardamom pods, cinnamon stick, and mace (if using). Roast them over low heat for about 2-3 minutes until they release their aroma. Be careful not to burn them as it can make the spice blend bitter.
2. Cool and Grind: Remove the roasted spices from the pan and let them cool to room temperature. Once cooled, transfer them to a spice grinder or mortar and pestle. Add the grated nutmeg to the spice grinder as well.
3. Grinding: Grind all the roasted spices and additional ingredients until you get a fine powder. If using a mortar and pestle, grind them in batches to ensure a smooth and consistent texture. You may also sift the spice mix to remove any larger particles for a more refined texture.
4. Storing: Once the Nihari Masala spice mix is ready, transfer it to an airtight container. Store it in a cool, dark place to preserve its flavor and aroma.
