Ingredients:
Chicken Bones:

Roast the Bones (Optional):
For a deeper flavor, you can roast the chicken bones in the oven at 400°F (200°C) for about 20-30 minutes until they turn golden brown.
Combine Ingredients in a Pot:
In a large stockpot, combine the chicken bones, chopped vegetables, herbs, and spices. Pour enough water to cover all the ingredients.
Bring to a Simmer:
Slowly bring the mixture to a simmer over medium heat. Skim off any foam or impurities that rise to the surface.
Simmer Gently:
Reduce the heat to low, cover the pot, and let it simmer gently for at least 1.5 to 2 hours. The longer it simmers, the richer the flavor will be.
Strain the Stock:
Once the stock has simmered to your satisfaction, strain it through a fine-mesh strainer or cheesecloth into another pot or large bowl.
Cool and Store:
Allow the stock to cool before storing it in containers. You can refrigerate it for a few days or freeze it for longer preservation.
Use or Freeze:
Use the chicken stock as a base for soups, stews, risottos, or sauces. If you're not using it immediately, portion it into containers and freeze for future use.
Tips:
Don't add too much salt during the cooking process; it's easier to adjust the seasoning when you're using the stock in a specific recipe.
