Gumbo Recipe

1/2 cup vegetable oil
1/2 cup all purpose flour
2 Cups diced white onion
1 Cup diced bell pepper
1 Cup diced celery
1/2 Cup Green Onion diced
6 Cups Turkey Stock
1/2 cap full of Shrimp & Crab boil (optional)
1 Tbsp Cajun seasoning
1 tsp Thyme
1 Cup Andouille sausage
1 Cup of your favorite sausage
