I will detail each of the recipes for lunch and dinner:
1. Vegetable Soup
Ingredients:
Various vegetables (carrots, zucchini, broccoli, potatoes, onions, leeks, etc.)
Vegetable broth (homemade or industrialized)
Seasonings to taste (salt, pepper, herbs such as parsley, chives, etc.)
Method of preparation:
Wash, peel and cut the vegetables into small pieces.
In a large pan, heat the vegetable broth. If you are using industrialized broth, dilute it according to the manufacturer's instructions.
Add the cut vegetables to the hot broth and cook over medium heat until they are soft. Cooking time may vary depending on the type of vegetable.
Season the soup with salt, pepper and other herbs or seasonings of your choice.
Serve the soup hot accompanied by toast or wholemeal bread.
2. Grilled Chicken with Vegetables
Ingredients:
Chicken breast
Assorted vegetables (peppers, onions, zucchini, carrots, etc.)
Seasonings to marinate the chicken (lemon, garlic, herbs, olive oil, salt, pepper)
Method of preparation:
Cut the chicken breast into pieces or fillets and season with lemon, chopped garlic, herbs, olive oil, salt and pepper to taste. Leave to marinate for at least 30 minutes.
Cut the vegetables into medium pieces for grilling.
In a frying pan or barbecue, grill the seasoned chicken until it is completely cooked on the inside and golden on the outside.
In another frying pan or grill, grill the vegetables seasoned with a drizzle of olive oil until they are soft and golden.
Serve the grilled chicken with vegetables as a side dish.
3. Baked Fish with Salad
Ingredients:
Fish fillet (salmon, tilapia, hake, etc.)
Salt, pepper, lemon and seasonings to taste
Green leaves (lettuce, arugula, watercress), tomato, cucumber, olive oil
Method of preparation:
Preheat the oven to 200°C.
Season the fish fillet with salt, pepper, lemon and other seasonings of your choice.
Place the fish fillet on a baking tray lined with aluminum foil and bake in the oven for about 15-20 minutes, or until the fish is cooked through.
While the fish is roasting, prepare the salad by washing and chopping the green leaves, tomato and cucumber. Season with olive oil and lemon.
Remove the fish from the oven and serve with the fresh salad as a side dish.
These are healthy and balanced options for nutritious and tasty lunches and dinners.
