Introduction:

Ingredients:

Flour tortillas (8 medium-sized)
2 cups sliced mushrooms (button or cremini)
2 cups fresh spinach, chopped
1 1/2 cups shredded mozzarella cheese
1 cup crumbled feta cheese
1/2 cup diced red onion
2 cloves garlic, minced
2 tablespoons olive oil
Salt and pepper to taste
Sour cream and salsa for serving

Instructions:

Sauté the Mushrooms:

In a skillet, heat olive oil over medium heat. Add sliced mushrooms and sauté until they release their moisture and become golden brown. Season with salt and pepper.

Add Spinach and Garlic:

Add chopped spinach and minced garlic to the skillet. Sauté until the spinach wilts and the garlic becomes fragrant. Remove from heat.

Prepare the Quesadillas:

Place a tortilla on a clean surface. Sprinkle mozzarella cheese on half of the tortilla. Add a layer of the mushroom and spinach mixture, crumbled feta, and diced red onion.

Fold and Cook:
