Follow up Grolleau Gris Vinegar Tasting

It's been almost two months (from recording) and I am ready to try the homemade wine vinegar once again! While it smells like vinegar, it still tastes closer to a sweet wine, which is unfortunate as it has already been bottled for longer term storage. May keep it exposed to air from time to time as well as use it for lighter salads, but maybe next time ferment the full two months...maybe three...unsure...or use a different mother...lots of things to think about!
