Ingredients:
1 cup quinoa, rinsed and cooked
2 cups mixed vegetables (bell peppers, cherry tomatoes, zucchini, etc.), diced
2 tablespoons olive oil
Salt and black pepper to taste
1 teaspoon cumin powder
1/2 teaspoon paprika
1/4 cup fresh parsley, chopped
Feta cheese for garnish (optional)
For the Dressing:
3 tablespoons extra-virgin olive oil
2 tablespoons balsamic vinegar
1 clove garlic, minced
1 teaspoon Dijon mustard
Salt and pepper to taste
Instructions:
Roast Vegetables:
Preheat the oven to 400°F (200°C). Toss the diced vegetables with olive oil, salt, pepper, cumin powder, and paprika. Spread them on a baking sheet and roast for 20-25 minutes or until golden and tender.
Cook Quinoa:
In a separate pot, cook quinoa according to package instructions. Once cooked, fluff it with a fork and let it cool.
Prepare Dressing:
In a small bowl, whisk together olive oil, balsamic vinegar, minced garlic, Dijon mustard, salt, and pepper. Set aside.
Assemble the Salad:
In a large bowl, combine the cooked quinoa and roasted vegetables. Drizzle the dressing over the mixture and toss gently to coat.
Garnish and Serve:
Sprinkle fresh parsley over the salad and garnish with crumbled Feta cheese if desired. Serve chilled or at room temperature.
