Introduction:
Indulge in the savory goodness of our Ham and Cheese Muffins. Packed with chunks of flavorful ham, gooey melted cheese, and a hint of herbs, these muffins are a delightful twist on the classic breakfast or brunch option. They're portable, satisfying, and bursting with savory flavors. 🌞
Ingredients:
2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup unsalted butter, melted
1 cup buttermilk
2 large eggs
1 1/2 cups diced cooked ham
1 1/2 cups shredded cheddar cheese
2 tablespoons fresh chives, finely chopped
Instructions:
Preheat Oven:
Preheat your oven to 375°F (190°C). Grease a muffin tin or line it with paper liners.
Mix Dry Ingredients:
In a large bowl, whisk together the flour, baking powder, baking soda, salt, and black pepper.
Combine Wet Ingredients:
In another bowl, whisk together the melted butter, buttermilk, and eggs until well combined.
Combine Wet and Dry Ingredients:
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
Add Ham, Cheese, and Chives:
Gently fold in the diced ham, shredded cheddar cheese, and chopped fresh chives into the batter.
Fill Muffin Cups:
Spoon the batter into the muffin cups, filling each about two-thirds full.
Bake:
Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.
Cool:
Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
