Ingredients:
1 lb spaghetti
2 dozen littleneck clams, scrubbed
1/4 cup olive oil
4 cloves garlic, minced
1/2 tsp red pepper flakes (adjust to taste)
1 cup dry white wine
1/4 cup fresh parsley, chopped
Salt and black pepper, to taste
Grated Parmesan cheese, for serving
Instructions:
Prepare Clams:
Scrub the clams under cold running water to remove any sand or debris. Discard any clams with open shells that do not close when tapped.
Cook Spaghetti:
Cook the spaghetti in a large pot of salted boiling water until al dente. Drain and set aside.
Sauté Garlic and Red Pepper Flakes:
In a large skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes. Sauté until the garlic becomes fragrant.
Add Clams and White Wine:
Place the clams in the skillet and pour in the white wine. Cover the skillet and let the clams steam for 5-7 minutes or until they open. Discard any clams that do not open.
Season and Toss:
Season the clam sauce with salt and black pepper. Add the cooked spaghetti to the skillet, tossing to coat the pasta in the flavorful sauce.
Garnish and Serve:
Sprinkle fresh parsley over the dish for a burst of color and freshness. Serve hot, with grated Parmesan cheese on the side.
