PREPARATION:
Certainly! Here's a simple recipe for making Lamb Shank with Eggplant and Potatoes:
Ingredients:
4 lamb shanks
2 large eggplants, diced
4 medium potatoes, peeled and diced
1 large onion, finely chopped
4 cloves garlic, minced
1 can (14 oz) diced tomatoes
1 cup chicken or beef broth
1/2 cup red wine (optional)
2 tablespoons tomato paste
2 teaspoons dried oregano
2 teaspoons dried thyme
Salt and pepper to taste
Olive oil for cooking
Fresh parsley for garnish
Instructions:
Preheat the Oven:
Preheat your oven to 325°F (160°C).
Brown the Lamb Shanks:
Season the lamb shanks with salt and pepper. In a large ovenproof pot, heat olive oil over medium-high heat. Brown the lamb shanks on all sides until they develop a golden crust. Remove the lamb from the pot and set it aside.
Saute Onions and Garlic:
In the same pot, add a bit more olive oil if needed. Add chopped onions and minced garlic. Cook until the onions are softened and translucent.
Add Tomato Paste and Herbs:
Stir in the tomato paste, dried oregano, and dried thyme. Cook for a couple of minutes to enhance the flavors.
Deglaze with Wine:
If using red wine, pour it into the pot to deglaze, scraping up any browned bits from the bottom of the pot.
Combine Ingredients:
Add the diced tomatoes with their juice, chicken or beef broth, and return the browned lamb shanks to the pot. Bring the mixture to a simmer.
Prepare Vegetables:
Add the diced eggplants and potatoes to the pot, ensuring they are submerged in the liquid. Season with salt and pepper.
Bake in the Oven:
Cover the pot with a lid and transfer it to the preheated oven. Bake for 2.5 to 3 hours or until the lamb is tender and falling off the bone.
Check for Doneness:
Check the lamb shanks for doneness. If they are fork-tender, they are ready.
Garnish and Serve:
Remove the pot from the oven. Garnish with fresh parsley.
