PREPARATION:
Making a perfect steak and root vegetable pie involves several steps. Here’s a general recipe to guide you through the process:
Ingredients:
For the Filling:
1. 2 pounds of stewing beef (cut into chunks)
2. 2 tablespoons of flour
3. Salt and black pepper (to taste)
4. 2 tablespoons of oil
5. 2 onions (chopped)
6. 3 cloves of garlic (minced)
7. 2 cups of beef stock
8. 1 cup of red wine (optional)
9. 2 tablespoons of tomato paste
10. 2 sprigs of thyme
11. 2 bay leaves
12. 3-4 cups of mixed root vegetables (carrots, parsnips, potatoes, etc., peeled and chopped)
For the Pie Crust:
2 sheets of store-bought puff pastry or pie crust
1 egg (beaten, for egg wash)
Instructions:
1. Prepare the Filling:
Preheat your oven to 375°F (190°C).
Season the beef chunks with salt and black pepper. Coat them with flour.
Heat the oil in a large, oven-safe pan over medium-high heat. Brown the beef chunks in batches, then set them aside.
In the same pan, sauté the onions and garlic until they're translucent.
Return the beef to the pan. Add the beef stock, red wine (if using), tomato paste, thyme, and bay leaves. Bring to a simmer.
Cover the pan and transfer it to the preheated oven. Allow it to cook for about 1.5 to 2 hours or until the beef is tender.
2. Add Root Vegetables:
Around 30 minutes before the beef is done, add the root vegetables to the pan. Stir to combine. Cook until the vegetables are tender but not mushy.
3. Prepare the Pie:
Remove the pan from the oven. Take out the bay leaves and thyme sprigs.
Roll out the puff pastry or pie crust. You'll need one sheet for the base and one for the top.
Line the base of a pie dish with one sheet of pastry. Fill it with the beef and root vegetable mixture.
Cover the filling with the other sheet of pastry. Crimp the edges to seal the pie.
Brush the top of the pie with the beaten egg to create a golden crust.
Cut a few slits in the pastry to allow steam to escape.
4. Bake the Pie:
Place the pie in the preheated oven and bake for about 25-30 minutes or until the pastry is golden and flaky.
5. Serve and Enjoy:
Let the pie cool for a few minutes before slicing.
Serve the steak and root vegetable pie with your favorite sides or on its own.
