Exquisite Delight: How to Craft the Perfect Shrimp Tahchin
Iranian Shrimp Tahchin – An Authentic Iranian Dish
In my opinion, it's one of the most delicious dishes; you must try it! 😋
Ingredients for 2 servings:
• 2 cups rice
• 500 grams cleaned shrimp
• 3 onions
• 2 carrots
• 1 egg yolk
• 1 tablespoon thick yogurt
• 50 grams barberry
• 50 grams crushed walnuts
• 50 grams dried cranberries
• 50 grams dried barberries
• 50 grams butter
• Half a cup of brewed saffron
• 1/4 teaspoon black or white pepper
• Salt to taste
• Lime zest and olive oil
Instructions:
1. Rinse half of the rice and mix it with yogurt, egg yolk, half of the brewed saffron, and a little olive oil.
2. Peel and slice the onions, then sauté them with a little oil until golden brown. Add walnuts, dried barberries, dried cranberries, and briefly sauté. Set aside.
3. Grate the carrots and sauté them with butter and a little saffron.
4. Marinate the shrimp with lime zest, olive oil, salt, and pepper, then sauté them until cooked.
5. Pour some oil into the bottom of a pot and let it heat up. First, add the yogurt rice mixture to the pot and press it slightly. Then add a layer of all the sautéed ingredients. Next, add the remaining plain rice and let it cook over low heat.
