No-Bake Brownie Cupcakes
Ingredients for the base:
• 1 cup almond flour or hazelnut flour
• 1/2 cup peanut butter
• 1/4 cup unsweetened cocoa powder
• 1/4 cup date syrup or grape syrup or honey
• 1 teaspoon vanilla extract
• 1/4 teaspoon salt
Ingredients for the filling:
• Peanut butter
• Honey or syrup (optional)
• Dark chocolate for decoration
Instructions:
1. Mix all the base ingredients together until well combined.
2. Press the mixture into cupcake liners in a muffin tin, creating a smooth and even base layer. Place in the refrigerator to set while you prepare the filling.
3. Fill each cup with peanut butter or your preferred filling, and if desired, mix in some honey or syrup for added sweetness.
4. Melt some dark chocolate and drizzle it over the top of each cupcake for decoration.
5. Place the cupcakes back in the refrigerator to chill until the filling is firm.
6. Once set, serve and enjoy these delicious no-bake brownie cupcakes!
