These Cauliflower Baja Tacos are a delightful twist on traditional tacos, featuring crispy baked cauliflower florets coated in a zesty baja sauce and topped with fresh avocado salsa for a burst of freshness in every bite.

Ingredients:

1 head cauliflower, cut into florets
2 tablespoons olive oil
1 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon garlic powder
Salt and black pepper, to taste
1/4 cup mayonnaise
2 tablespoons Greek yogurt or sour cream
1 tablespoon lime juice
1 tablespoon chopped fresh cilantro
8 small corn or flour tortillas
1 cup shredded cabbage or coleslaw mix
1 avocado, diced
1/4 cup diced red onion
1/4 cup diced tomato
Lime wedges, for serving

Instructions:

Preheat the Oven:

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.

Prepare the Cauliflower:

In a large mixing bowl, toss the cauliflower florets with olive oil, chili powder, cumin, garlic powder, salt, and black pepper until evenly coated.

Bake the Cauliflower:
