Trying a NEW meatloaf recipe!

I like to take advantage of prep-cooking when in the kitchen! Why not throw a couple of things in the oven at once, or pan fry a bunch of veggies while the pan is hot. Today we are trying a new mealtloaf recipe. Spoiler, we liked it! I had to fend off the boys so that we could get a second meal of meatloaf sandwiches later this week, do you eat those? My grandma made THE BEST leftover meatloaf sandwiches!
