When animals are slaughtered there are always meat remnants left. These remnants are hard to sell, so the industry came up with a solution – gluing the pieces together to make larger pieces of meat.

The do this with “meat gloo.” They use this in fish also.

This glue is applied to steaks in America.

The meat scraps are combined with glue made from animal blood. Fibrinogen and Thrombin are proteins derived from blood and act as a natural adhesive.

The enzyme used is called Transglutaminase. This enzyme creates strong bonds between the protein and the meat.

They add the meat glue to the remnants and allow to soak for about one day. The result is a larger piece of meat or fish and it is barely noticeable that they are not one original piece of meat.

Meat produces do this to cut costs and avoid wastes.

This technique is used in hamburger and sausage also.

The United State Department of Agriculture's Food Safety and Inspection Service has mandatory labeling requirements for transglutaminase.

The enzyme must be listed in the product ingredient statement along with any other ingredients used in the product formulation.

The keyword to look for on meat labels is the word “FORMED.”

Products formed from pieces of whole muscle meat, or that have been reformed from a single cut, must disclose this fact on their label, as part of the product name, e.g., "Formed Beef Tenderloin" or "Formed Turkey Thigh Roast."
