Now comes the best part - letting everything simmer away low and slow, allowing the flavors to meld together and the oxtails to become fall-off-the-bone tender. It's a labor of love, but trust me, the end result is so worth it.
After a few hours of simmering, the oxtails are meltingly tender and the sauce has thickened into a rich, velvety gravy. I give it a taste and adjust the seasoning as needed, adding a pinch of salt and pepper to really make those flavors sing.
