Spam Patties #spamrecipe

Quick Spam patties recipe to use up some of your leftover hard boiled eggs from Easter!
Ingredients:
1 can of Spam, I use 25% less sodium
4 hard boiled eggs
4 oz cheddar cheese, I used white cheddar / 113 g
1 small onion, chopped
3 Tbsp mayonnaise / 47 g
6 slices of bacon, cut in half

1. Preheat broiler.
2. Combine Spam, eggs, cheese and onion in a food processor and mix well.
3. Stir in mayonnaise and mix.
4. Form six patties and place onto lined baking pan.
5. Place bacon on to of each one.
6. Broil a few inches from the heat for 5 - 8 minutes, flipping over at half way point (remove bacon and place on top). These patties crumble easily, so be cautious when flipping over. Once golden and bacon is crispy t o your liking, remove and serve over hamburger buns or as is.
