Why Does Clean Matter?

In the Old Testament, God said it was very important for his people to be clean. He was referring to a cleanness that was different from getting mud on your hands - a cleanness that we do not experience. Because we cannot see, hear, small, touch, or taste this uncleanness, what does it matter to us if we are clean or unclean. But it matters to God. Why?
