Perfect CRISPY Chicken Cutlets
INGREDIENTS
1-2 chicken breast
150ml sunflower oil
2 eggs
1 lemon
1 cup (250g) plain/all-purpose flour
1 cup (250g) breadcrumbs
1 tsp dried parsley
1 tsp dried oregano
1 tsp dried mixed herbs
1 tsp garlic powder
1 tsp onion powder
20g parmesan
Salt
Black pepper
METHOD
1. Thinly slice the chicken breast
2. Season both sides with salt and black pepper
3. Add breadcrumbs, oregano, parsley, mixed herbs, onion, garlic, black pepper, salt and parmesan in a bowl
4. Mix with a whisk
5. Add two eggs in a bowl and whisk
6. Add flour in a bowl
7. Pour oil into a cast-iron skillet on a medium heat
8. Dip the chicken cutlets in the flour
9. Dredge in the egg
10. Coat in the breadcrumbs mix
11. Fry for 3 minutes
12. Turn over and fry for 3 more minutes until golden brown
13. Place on a paper towel to drain any excess oil
14. Season with salt and squeeze lemon juice on top
