Gradually add the flour and salt, mixing until a rough, sticky dough forms. Cover the bowl with a damp kitchen towel or plastic wrap and let rest at room temperature for 30 minutes to 1 hour. Knead the dough on a lightly floured surface for about 10 minutes until smooth and elastic. Return to the bowl, cover, and let rise in a warm place until doubled in size (3-12 hours). Optionally, perform stretch and folds every 30 minutes for the first 2 hours of the bulk rise. Turn the dough onto a lightly floured surface, divide if desired, and shape into a tight ball. Place the dough in a parchment-lined or cornmeal-dusted Dutch oven. Cover and let rise for 30 minutes to 1 hour until slightly puffy. Preheat the oven to 450ºF (232ºC) during the last 30 minutes of the second rise. Score the dough with a shallow slash before baking. Bake in the Dutch oven at 400ºF (204ºC) for 20 minutes with the lid on, then remove the lid and bake for an additional 40 minutes until deep golden brown. Cool on a wire rack for at least 1 hour before slicing.
