Mixed Berry with Lemon Cream Biscuits

Ingredients

260 grams (1 & ¾ cups) of All Purpose Flour
40 grams of Dr. Oetker Mixed Berry Jelly powder (found on Amazon) - or jello mix
½ teaspoon of Baking Powder
160 grams (1 & ¾ cups) of Butter at room temperature
½ cup of Brown Sugar
1 large Egg at room temperature
1 - 2 teaspoons of Vanilla Extract
1 teaspoon of cold Milk
¼ teaspoon of salt

Instructions for the Biscuits
Use a whisk to fluff the sugar and butter until it’s smooth
Add the egg and vanilla; whisk into the mixture
Add shifted flour and baking powder
Add the salt and milk
Continue mixing until the dough begins to form
Flour your hands and the counter-top
Cut the dough in half, use your hands to roll the dough into a disc
Wrap each piece in plastic wrap and place in the refrigerator for up to 40 mins or until the dough gets firm
Remove from the refrigerator and roll out the dough ¼ inch thick
Use a small cookie cutter and cut out the biscuits

Bake the biscuits for 10 - 12 mins - The ones on the video were baked for 10 mins

Bake at 355 degrees F (179 degrees C)

Instructions for the Lemon Cream Filling
In a bowl whisk 2 cups of icing sugar
3 -4 tablespoons of Happy Home Natural Lemon Flavour ( or fresh lemon juice)
60-70 grams of melted butter (or very soft butter)

Let the cookies cool completely - Put the biscuits together by making sandwiches with the cookies and cream. One biscuit, a small spoon of cream, then another biscuit on top. Enjoy!
