Hey everyone, welcome back to Court of Kitchen! Today, we're whipping up something perfect for spring and summer: Old Bay Ranch Shrimp Salad Sliders. Get ready for a delicious blend of flavors that's sure to impress.
Old Bay Ranch Shrimp Salad Sliders
Ingredients:
- 1 lb. small Shrimp (70-90 count), peeled and deveined
- 1 Tbsp. Olive oil
- 1 tsp. Old Bay seasoning
Dressing/Remaining Ingredients:
- 2 scallions, finely chopped
- 1 stalk of celery, finely chopped
- 1/2 cup mayonnaise
- 1/2 cup full-fat Greek yogurt (or sour cream)
- 1 tsp. Old Bay seasoning
- 1/2 tsp granulated garlic
- 1 tsp dried dill (or 1 tbsp fresh dill)
- 1-2 tsp Dijon mustard
- 1 tbsp lemon juice
- Salt (if needed, adjust to taste)
- Pepper (if needed, adjust to taste)
- Soft rolls (e.g., brioche, Kaiser rolls)
Roadmap:
1. Shrimp:
- In a large skillet, add olive oil & shrimp
- Sprinkle with 1 tsp. Old Bay
- Cook until shrimp are opaque and curled (about 2 minutes), then remove from heat and let cool.
2. Prepare the Dressing:
- Combine mayonnaise, Greek yogurt, Old Bay seasoning, granulated garlic, dill, Dijon mustard, and lemon juice in a bowl.
- Adjust seasoning with salt and pepper if necessary.
3. Assemble the Salad:
- Once cooled, chop the cooked shrimp into bite-sized pieces if needed.
- Mix chopped scallions, celery, and cooked shrimp in a large bowl.
- Mix the prepared dressing until the shrimp mixture is evenly coated. Adjust the dressing amount according to preference.
4. Sliders Preparation:
- Slice the soft rolls horizontally.
- Spoon the shrimp salad onto each roll.
- Serve and enjoy!
