Spicy Crispy Chicken Recipe
I'm sharing a delicious Spicy Crispy Chicken recipe that's perfect for any occasion. Made with tender chicken thighs and a blend of aromatic spices, this dish promises to satisfy your taste buds. Follow along for a step-by-step guide to creating this crispy, savory delight.

Servings: 2-3
Ingredients:
- Chicken thigh meat: 200-400 grams (7-14 oz)
- Green onions: 2-3
- Ginger: 3-4 slices
- Chicken bouillon powder: 1 teaspoon (approx. 5 grams)
- Five-spice powder: 1/2-1 teaspoon
- Soy sauce: 1 tablespoon (approx. 15 ml)
- Dried chili peppers: to taste (approx. 100 grams or 3.5 oz)
- White sesame seeds: 10-20 grams (1-2 tablespoons)
- Red Sichuan peppercorns: 15-20 grams (1-2 tablespoons)
- Green Sichuan peppercorns: 15-20 grams (1-2 tablespoons)
- Minced green onion, ginger, and garlic: to taste
- Sugar: 2 teaspoons
- MSG: 1 teaspoon
- Aged vinegar: 1-2 tablespoons
Instructions:
1. Prepare the Chicken:
- Choose 200-400 grams (7-14 oz) of chicken thigh meat, cut into bite-sized pieces (about 2-3 cm or 1 inch cubes).
- Sprinkle a little salt on the chicken, let it sit for a while, then pat dry with paper towels.
2. Marinate the Chicken:
- Place the chicken pieces in a large bowl, add chopped green onions and ginger slices.
- Add 1 teaspoon of chicken bouillon powder, 1/2-1 teaspoon of five-spice powder, and 1 tablespoon of soy sauce. Mix well and set aside to marinate.
3. Prepare the Dried Chili Peppers:
- Use scissors to cut the dried chili peppers into two sections, place them in a bamboo basket, and shake to remove excess seeds.
4. Prepare Other Ingredients:
- Mix the white sesame seeds, red Sichuan peppercorns, and green Sichuan peppercorns together and set aside.
- Mince the green onion, ginger, and garlic, and cut some green onions into thin strips.
5. Fry the Chicken:
- Heat oil to 160-170°C (320-340°F), fry the chicken pieces for 1-1.5 minutes, then remove and drain.
- Increase the oil temperature to 180-190°C (355-375°F), fry the chicken a second time for 30 seconds to 1 minute until golden brown, then remove and drain.
6. Stir-fry:
- Using a new pan or a clean one, add a small amount of oil and heat over medium heat until smoking, then add the minced green onion, ginger, and garlic and stir-fry until fragrant.
- Add the dried chili peppers and stir-fry until aromatic, then add the red and green Sichuan peppercorns and continue stir-frying.
- Add the fried chicken pieces and stir-fry, gradually adding sugar and MSG to taste.
- Finally, pour in the aged vinegar and stir-fry until well mixed.
7. Finish and Serve:
- Sprinkle with white sesame seeds and green onion strips, stir a few more times, then remove from heat.
8. Plate:
- Transfer the spicy chicken to a serving plate and enjoy.
