- 1 cup tomato sauce
- 1 cup vegan chicken, shredded or chopped
- 1/2 red onion, thinly sliced
- 1 cup (vegan) mozzarella cheese, grated
- 1 cup fresh spinach leaves
- Olive oil
- Salt and pepper to taste
- Optional: Italian herbs (basil, oregano, thyme)
