Chayote and Tempeh Curry

Living in Bali chayote and tempeh are some of our favourite daily foods, so easy to find in the local market, we love the taste and texture. Here is one of our favourite family recipes for lunch or dinner😊

Served for 2 people

Suitable for vegetarians just need to change the chicken stock to vegetable stock🍀

Ingredients:
1 pcs chayote
1 pax (140 gr) tempeh
350 ml chicken stock
65 ml thick coconut milk (I’m using one from the carton )
2 tbsp vegetable oil
5 pcs (30 gr) shallots
5 pcs (20 gr) garlic
2 gr ginger (small sliced)
4 gr (1 cm) turmeric
3 pcs candlenut
2 big red chilli
1/4 cup fresh water
1/2 tsp white pepper corns
1/2 tsp coriander seeds
1/2 tbsp mild curry powder
1/4 tsp chilli powder
1/2 tsp salt
1/2 tsp sugar
2 pcs kaffir lime leaves
1 pcs lemongrass
10 gr (1 cm) galangal

Garnish:
Big red chilli sliced
Kaffir lime leaves
Fried shallots

Served with warm steamed rice 🍚
