Ingredients
For the Crust:
2 ½ cups all-purpose flour
1 teaspoon salt
1 teaspoon sugar
1 cup (2 sticks) unsalted butter, chilled and cut into small pieces
6-8 tablespoons ice water
For the Filling:
6-8 medium-sized apples (Granny Smith, Honeycrisp, or a mix)
¾ cup granulated sugar
¼ cup brown sugar, packed
1 tablespoon lemon juice
2 tablespoons all-purpose flour
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon ground allspice
¼ teaspoon salt
1 teaspoon vanilla extract
For Assembly:
1 egg, beaten (for egg wash)
1 tablespoon granulated sugar (for sprinkling)
Instructions
1. Prepare the Crust:
Mix Dry Ingredients: In a large bowl, combine the flour, salt, and sugar.
Cut in Butter: Add the chilled butter pieces and use a pastry cutter or fork to mix until the mixture resembles coarse crumbs.
Add Ice Water: Gradually add the ice water, one tablespoon at a time, mixing until the dough comes together. Be careful not to overwork the dough.
Form the Dough: Divide the dough into two equal parts, shape them into discs, wrap in plastic wrap, and refrigerate for at least 1 hour.
2. Prepare the Filling:
Peel and Slice Apples: Peel, core, and thinly slice the apples. Place them in a large bowl.
Add Remaining Ingredients: Add the granulated sugar, brown sugar, lemon juice, flour, cinnamon, nutmeg, allspice, salt, and vanilla extract to the apples. Toss to coat evenly.
Let Sit: Allow the mixture to sit for about 10 minutes to let the flavors meld.
3. Assemble the Pie:
Preheat Oven: Preheat your oven to 425°F (220°C).
Roll Out Dough: On a lightly floured surface, roll out one disc of dough to fit a 9-inch pie dish. Transfer the dough to the pie dish and trim the edges.
Add Filling: Pour the apple filling into the crust, arranging the apple slices to eliminate air gaps.
Top Crust: Roll out the second disc of dough and place it over the filling. Trim the edges, leaving a 1-inch overhang. Fold the overhang under the bottom crust edge and crimp to seal.
Egg Wash: Brush the top crust with the beaten egg and sprinkle with granulated sugar. Cut a few slits in the top crust to allow steam to escape.
4. Bake the Pie:
Initial Bake: Bake the pie at 425°F (220°C) for 20 minutes.
Reduce Temperature: Reduce the oven temperature to 375°F (190°C) and continue baking for 40-45 minutes, or until the crust is golden brown and the filling is bubbling.
Cool: Allow the pie to cool on a wire rack for at least 2 hours before serving to let the filling set.
