Chicken and Waffle Casserole Recipe
Ingredients:
For the Chicken:
2 lbs boneless, skinless chicken breasts
1 cup buttermilk
1 tsp salt
1 tsp black pepper
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
1/2 tsp cayenne pepper (optional)
1 cup all-purpose flour
1 cup breadcrumbs
1/2 cup grated Parmesan cheese
Oil for frying
For the Waffles:
2 cups all-purpose flour
1 tbsp sugar
1 tbsp baking powder
1/2 tsp salt
2 large eggs
1 3/4 cups milk
1/2 cup vegetable oil
1 tsp vanilla extract
For the Sauce:
1/4 cup butter
1/4 cup all-purpose flour
2 cups chicken broth
1 cup heavy cream
Salt and pepper to taste
For the Casserole:
1 cup shredded cheddar cheese
1/4 cup chopped fresh parsley (optional)
Instructions:
Prepare the Chicken:
In a large bowl, mix the buttermilk, salt, pepper, paprika, garlic powder, onion powder, and cayenne pepper.
Add the chicken breasts, ensuring they are well-coated. Cover and marinate in the refrigerator for at least 1 hour or overnight.
In another bowl, mix the flour, breadcrumbs, and Parmesan cheese.
Heat oil in a large skillet over medium heat.
Dredge the marinated chicken in the flour mixture, pressing to adhere.
Fry the chicken until golden and crispy, about 5-7 minutes per side. Remove and drain on paper towels. Once cool, cut into bite-sized pieces.
Make the Waffles:
Preheat your waffle iron.
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
In another bowl, beat the eggs and then stir in the milk, oil, and vanilla extract.
Pour the wet ingredients into the dry ingredients and mix until just combined.
Cook the waffles according to your waffle iron’s instructions until golden and crisp. Cut the waffles into bite-sized pieces.
Make the Sauce:
In a medium saucepan, melt the butter over medium heat.
Whisk in the flour and cook for 1-2 minutes until lightly browned.
Slowly whisk in the chicken broth and heavy cream.
Bring to a simmer and cook until thickened, about 5-7 minutes. Season with salt and pepper to taste.
Assemble the Casserole:
Preheat your oven to 350°F (175°C).
In a large casserole dish, layer half of the waffle pieces.
Top with half of the chicken pieces.
Pour half of the sauce over the chicken and waffles.
Repeat the layers with the remaining waffles, chicken, and sauce.
Sprinkle the shredded cheddar cheese over the top.
Bake for 25-30 minutes, until the cheese is melted and bubbly.
