INGREDIENTS:
Half cup oil
4 tbsp melted butter
3/4 cup sugar
3 eggs
half cup buttermilk(mix half cup milk with 1 tsp vinegar)
1 cup flour(maida)
1 n half tsp baking powder
1 tsp vanilla powder or extract
Half cup coconut (desiccated)

For Glaze & Topping:
4 tbsp jam+ 1 tbsp water (microwave for 15 seconds)
3-4 tbsp coconut
1 cherry

Method:
Preheat oven at 180c.Take 8 inch pan and line with parchment paper and grease with oil. In a bowl Mix oil ,sugar,then add eggs and beat well, add buttermilk and mix. Then add flour(sieve it) mix, add baking powder mix, add vanilla powder/extract, Mix, then add coconut .mix everything. Now add batter into the pan. Tap the pan twice to get rid of air bubbles.Bake at 180c for 35-40 minutes till a skewer comes out clean. Take it out, Let it rest 10 min, spread melted jam glaze,add some more coconut,put the cherry and its ready.

Cut into slices and enjoyyyy with your Chai/coffee

You can add any flavour of your choice into this cake batter, add more nuts, any favourite fruits, coffee, cinnamon, lemon juice, orange juice.
