RECIPE (4 servings, 45min prep time):
-3 eggplants
ROAST at 200C/400F for 20mins or until the skin starts to look old.
Place in a bowl, cover for 5mins.
Peel them and tear into stripes.
-1 Tsp each cumin, paprika, salt
-1/2 Tsp each garlic and chili powder
Toss it around.
Bake at 200C/400F for 20min.
Then combine with 3-4 Tbsp BBQ sauce and use as taco meat.
