Green Tabbouleh
Ingredients:
1 cup fine bulgur
2 cups hot or warm water
6 spring onions, finely chopped
1 large cucumber, peeled and diced (save some peels for Oreo!)
1 large avocado, diced
30 grams small green olives, left whole (or sliced if using large olives)
A handful of fresh parsley, chopped
A handful of fresh mint, chopped
Juice of 1 lemon
Salt and black pepper to taste
Olive oil to taste
Instructions:
Prepare the Bulgur:
Place the fine bulgur in a large bowl.
Pour 2 cups of hot or warm water over the bulgur. Cover the bowl and let it sit for a few minutes until the bulgur absorbs the water and becomes tender.
Prepare the Vegetables and Herbs:
While the bulgur is soaking, finely chop the spring onions, peel and dice the cucumber (saving some peels for Oreo!), dice the avocado, and chop the parsley and mint.
Add the Olives:
If your green olives are small, leave them whole and add them directly to the mixture. If they are large, slice them before adding.
Mix the Ingredients:
Once the bulgur is ready, fluff it with a fork.
Add the chopped spring onions, cucumber, avocado, olives, parsley, and mint to the bowl with the bulgur.
Season and Dress:
Squeeze the juice of one lemon over the mixture.
Add salt and black pepper to taste.
Drizzle with olive oil.
Serve:
Mix everything well to combine all the flavors.
Serve immediately and enjoy your green tabbouleh with the delightful addition of green olives!
