Eat young leaves as salad. Harvest leaves & root--separate. Try to get smaller roots bc bigger get woody. Chop each. Heat oven 350° & put both in & cut off stove. Leaves s/b dry PDQ. May have to hit roots 1 more time. Grind for coffee substitute. Mild sweet flavor.
