RECIPE
Coconut Curry Soup
Sautée one onion and grated ginger to taste in Oil.
Add 2 cans of coconut milk, 1 can of chicken broth and Curry paste to taste whisk and bring to boil.
Add chopped carrots, and continue to boil while you cut the potatoes.
Add chopped potatoes, chopped cauliflower, bell pepper, cook until soft. Not too soft.
Add spinach, the juice and zest of 3 limes, 1 can pineapple, and chopped cilantro.
Serve over rice, and top with ground peanuts.
