Watermelon Tomato Tartare with Fresh Mozzarella

Hi everyone, I’m Courtenay Hachey. Welcome back to Court of the Kitchen! Today, we’re making a refreshing watermelon tomato tartare with Fresh Mozzarella. It’s a tasty dish perfect for a light meal or appetizer.
Ingredients:
• 1-pound fresh mozzarella cheese
• 2 cups diced watermelon
• 1 cup cherry tomatoes, quartered
• Fresh basil leaves
• Olive oil
• Salt and pepper to taste
• Optional: A splash of balsamic vinegar or lemon juice

Roadmap:
1. Prepare the Watermelon:
o Dice the watermelon into small pieces, aiming for a 'tartare'—a fine, tiny dice.
2. Prepare the Tomatoes:
o Quarter the cherry tomatoes into small pieces.
3. Assemble the Salad:
o Combine the diced watermelon and quartered tomatoes in a large bowl.
4. Add Fresh Mozzarella:
o Slice the mozzarella into thin pieces or small chunks and add to the bowl.
5. Season and Finish:
o Tear fresh basil leaves into the mix. Drizzle with olive oil, and season with salt and pepper. Add a splash of balsamic vinegar or lemon juice if desired.
6. Mix and Serve:
o Gently toss everything together. Your Watermelon Tomato Tara with Fresh Mozzarella is ready to enjoy!
