Chili Crisp Salmon

➡️Ingredients
1/3 salmon filet (skin removed)
2 tbsp seafood seasoning of choice

1/2 pack of thin cut bacon
2 tbsp honey
1 tbsp sesame seeds
2 tbsp green onions chopped (green end)

➡️Chili Crisp Sauce
2 tbsp chili crisp
1/4 cup apple cider vinegar
1/2 cup ketchup
1 tbsp BBQ seasoning of choice.
2 tbsp honey
1 tbsp toasted sesame oil
2 tbsp brown sugar

➡️Directions
Cut the salmon into 1.5'' cubes. Cut the bacon strips in half. Wrap each piece of salmon with 1 bacon strip and use a toothpick to hold the bacon in place.
Place the bacon wrapped salmon bites on a cedar plank (that's already been charred). Coat each piece with the seafood seasoning.
Heat your grill (or smoker) to 300 degress F indirect. Place the cedar plank (with salmon bites) onto the grill and cook for roughly 20-25 minutes.
While the salmon is cooking, mix all of the ingredients for the chili crisp sauce in a sauce pot. Bring to boil and then simmer for roughly 15-20 minutes. Set aside.
Top each piece of salmon with the honey and cook for another 5-10 minutes, or to your desired doneness.
Remove the salmon from the grill, coat each piece with the chili crisp sauce, dust with the sesame seeds / green onions, and dig in.
