How to make Creamy Mac 'n Cheese in the Crockpot

The Crockpot tends to dry out Sharp and Extra Sharp cheeses and leaves the Mac 'n Cheese clumpy. This is a recipe I developed specifically for a Slow Cooker Macaroni and Cheese

16 ounces Macaroni noodles, cooked Al Dente
2 TBSP Vegetable Oil
16 ounces Grated Mild Cheddar Cheese, divided--reserve 4 ounces to top at the end of cooking
8 ounces Cubed American Cheese
3 1/2 Cups Half & Half or Whole Milk
1 12-ounce Can Evaporated Milk
1/2 Cup melted Butter
1 Tsp Salt
1/2 Tsp Black Pepper
1 Tsp Ground Mustard or 2 Tsp Dijon Mustard
2-4 TBSP Dried Minced Onion, Optional
2 TBSP Chopped Pimentos, Optional
