Bacon-Wrapped Chicken Poppers | Blackstone Griddles
Stuffed with roasted green chili and melted cheese, Todd’s bacon-wrapped chicken poppers, meat courtesy of Good Chop, get a layer of barbecue sauce before cooking. The result? Juicy, smoky bites of deliciousness that are hard to resist.

Ingredients
Wood pellets (for smoking, any variety)
4 small boneless chicken breasts
¼ cup fresh green chiles, chopped
½ cup shredded queso quesadilla cheese
Salt, pepper, and garlic powder (to taste)
6-8 slices of bacon
BBQ sauce (for basting)
2 tablespoons chopped cilantro
Directions
1. Preheat your pellet grill to 300°F, using the wood pellets of your choice.
2. Cut a slit down the middle of each chicken breast to create a pocket, being careful not to cut all the way through. Season both sides of each breast with salt, pepper, and garlic powder.
3. Stuff each pocket with shredded queso quesadilla cheese and chopped green chiles.
4. Wrap each chicken breast with bacon, securing the filling inside.
5. Place the bacon-wrapped chicken on the top rack of the grill.
6. When the chicken’s internal temperature reaches 150°F, brush each piece with BBQ sauce.
7. Continue cooking until the internal temperature reaches 165°F.
8. Remove from the grill, sprinkle with chopped cilantro, and serve.
