Chimichangas (Deep-fried burritos)
To make delicious chimichangas (deep-fried burritos), start by browning 1 pound of ground meat in a large skillet and draining the excess fat. Add a chopped medium onion and 1/2 cup of red chile sauce or enchilada sauce to the skillet, mixing well. Place about 3 tablespoons of the meat filling in the center of each of the 12 flour tortillas. Fold the tortillas, tucking in the ends, and secure them with wooden toothpicks. It's best to assemble just 2 or 3 at a time to prevent the tortillas from absorbing too much liquid.
Next, heat oil in a deep fryer to medium heat, ensuring there are about 4 inches of oil in the fryer. Carefully fry the folded tortillas, turning them until they are golden brown, which should take about 1 to 2 minutes. Remove the chimichangas from the oil and drain them on paper towels, keeping them warm until all are cooked. Garnish with 2 cups of shredded lettuce, 2 cups of chopped green onions, and 2 cups of cheddar cheese before serving. Enjoy your crispy, savory chimichangas!
