Homemade Mayonnaise
Ingredients:
1 egg yolk (room temperature)
1 teaspoon mustard
2 tablespoons white wine vinegar
200 ml oil (vegetable or sunflower oil)
Salt and ground pepper, to taste
Water (optional, to lighten the texture)
Lemon juice (optional, for extra taste)
Instructions:
In a clean, dry bowl, add the egg yolk, mustard, salt, pepper, and white wine vinegar. Whisk together until well combined.
Slowly add the oil, a few drops at a time, while whisking continuously. Once it starts to thicken, you can add the oil in a thin, steady stream until fully incorporated and creamy.
If desired, whisk in a little water to lighten the texture.
For extra flavor, squeeze in some fresh lemon juice and whisk again.
Store in an airtight container in the fridge and consume within four days, using fresh eggs to reduce the risk of contamination.
