Instant Khaman Dhokla Recipe I Tips & Tricks For Fluffy & Spongy Khaman Dhokla I India On A Plate

Gram/Chickpeas/Garbanzo flour batter is first seasoned then steam cooked to perfection. Next it's cut into squares and smothered with tempered mustard seeds, curry leaves, green chilies & Asafoetida/Hing. Finally, it's garnished with fresh cilantro/coriander leaves & shaved coconut. Ingredients For Khaman Dhokla Batter:
1.5 cups Besan/Gram Flour
1/4 tsp turmeric powder
1/2 tsp sugar
1/2 tsp salt
1/2 tsp Eno fruit-salt
Water to make batter - about a cup
Ingredients For Tempering/First Garnish:
2 tbsp cooking oil
1 tsp mustard seeds
10 to 12 curry leaves
1/4 tsp salt
1 to 2 tsp sugar-depending on how sweet or savory you like it
1/2 cup water
1 tbsp chopped coriander/cilantro leaves
Pinch of Asafoetida/Hing
Ingredients For Second Garnish:
1tbsp chopped coriander/cilantro leaves
Cooking Instructions:
Prepare Khaman Dhokla batter by adding all ingredients listed above for it, except Eno fruit-salt, to a bowl. Whisk gently for 5 minutes until you get a smooth batter with no lumps
Cover batter with hand towel and let it rest for 15 minutes
While Khaman batter is resting grease a round pan with oil, set it aside
After 15 minutes uncover batter than add Eno fruit-salt & whisk it well. Your batter will become initially foamy. Continue mixing it well with a whisk until silky smooth, then pour the Dhokla batter in the greased pan and place pan in a steamer as shown in the video above. Make sure you have ample water in the steamer to steam the Khaman Dhokla batter
Cover steamer with lid and steam Dhokla for 20 minutes on medium flame
Check to see Khaman dhokla are done by inserting a tooth pic in it
Remove dhokla from steamer & let cool
While Khaman Dhokla is resting let's prepare our tempering:
Add all ingredients listed above for First Tempering to a hot pan
Once oil is hot add mustard seeds, curry leaves & green chili slices
Mustard seeds will soon start spluttering/popping
At this point add a pinch of Asafoetida/Hing, salt, sugar, water & coriander leaves. Mix well then transfer to a bowl, set aside
Now turn the pan with steamed Khaman Dhokla upside down & place it on a plate or cutting board. Shake & Tap the pan so that the dhokla falls out of it. Next grease a knife with oil and cut Khaman Dhokla into squares
Garnish with tempering with a spoon then sprinkle coriander/cilantro leaves & shredded coconut over it.
Wala! Your delicious, Soft & Spongy Instant Khaman Dhokla are ready to be served. Enjoy by itself or with green cilantro/coriander chutney.
