SUGAR FREE CHOCOLATE PEANUT BUTTER COOKIES
2 cups rolled oats (old fashioned)
1 cup coconut flakes (sugar free)
1/2 cup chocolate chips (sugar free)
1/2 cup chopped pecans
Mix these ingredients and set aside

1 cup all-natural creamy peanut butter (Smuckers)
1/2 cup coconut oil (Spectrum organic refined)
1/2 cup all-natural honey
Melt these ingredients - do not boil
Remove from heat
Add 1 teaspoon vanilla extract

Add to dry ingredients and mix well

Using a cookie scoop place dollops on cookie sheet lined with parchment paper or reusable liners. With a fork flatten each cookie a little

Refrigerate 3-4 hours
Remove from cookie sheets and place in a storage container.
Place wax or parchment paper between each layer
Store in the refrigerator
