CHICKEN WITH MUSHROOM GRAVY

Chicken with Mushroom gravy has tender juicy chicken breasts and mushrooms smothered in a simple and delicious gravy. Serve it over mashed potatoes and have yourself a delicious dinner everyone will love!

Chicken with Mushroom gravy

Ingredients
1 1/2-1 3/4 lbs chicken breast
Heaping 1/3 cup flour
8 oz mushrooms, sliced
1/2 onion, diced
3 garlic cloves, minced
1 1/2 cups chicken broth
1 tablespoon soy sauce
1 tablespoon Worchester sauce
1 1/2 tablespoons cornstarch mixed with 2 tablespoons water

Directions
Slice chicken in half horizontally, place a parchment paper or plastic wrap over the top and pound evenly.
Season each side well with salt and pepper and dredge into flour.
Heat oil in a pan over medium high heat, and cook chicken until cooked through, about 4 minutes per side. Remove and set aside.
Add more oil and sauté mushrooms, onions and garlic for 6 minutes over medium heat.
Add chicken broth, soy sauce, Worchester sauce and cornstarch slurry. Bring to a boil and let simmer until the gravy has thickened.
Return the chicken back to the pan and remove from heat.

Mashed Potatoes

Ingredients
2 lbs potatoes, peeled and cut into chunks
3/4 cup whole milk
5 tablespoons butter
1 1/2 teaspoons garlic powder
1 1/2 tablespoons onion powder

Directions
Place potatoes in a pot and cover with water. add a handful of salt and bring to a boil. Let boil until the potatoes are tender, about 12-14 minutes.
Combine milk and butter and microwave for 1 minute until the butter has melted.
Drain potatoes then place them back into the pot over medium low heat to remove some of the moisture, about 1-2 minutes.
Mash potatoes, pouring increments of the milk mixture and season with garlic powder, onion powder, salt, and pepper. If needed, add more warm milk to reach the desired consistency.
