Black garlic rack of lamb
Ingredients:
Rack of lamb
1/2 stick softened, unsalted butter
1 head black garlic
Salt
Meat thermometer
Instructions:
1. Let lamb rest out of the fridge for 30 min
2. Preheat oven to 400° F
3. Put the butter in a bowl and peel your black garlic. Using the back of a knife, crush all the cloves into a paste and add to the butter. Add salt to taste and combine everything to make a uniform compound butter.
4. Put the meat thermometer in the lamb before spreading the butter on all sides.
5. Bake lamb until internal temperature reaches 125°
6. Let rest for 10 minutes before carving, and finish by drizzling the butter all over.
Note: you can customize the butter with any other herbs or spices that you like.
