Snack Stick failure - Venison with pork

I have Honey BBQ recipe I have done for Jerky with pure venison. I thought it would replace the last Honey BBQ recipe I tried that I thought was weak. This has great flavor with jerky but all the liquid prevents the pork fat from binding with the Non Fat Dry Milk (NFDM)

Maybe try a batch with beef later.
