- **Salt**: 1 tsp
- **Instant yeast**: 2 tsp
- **Milk**: 1 cup (warm, about 110°F or 43°C)
- **Butter**: 3 tbsp (softened)
- **Egg**: 1 (for the dough)
- **Egg yolk**: 1 (for egg wash)
#### For the Chicken Filling:
- **Chicken (shredded or finely chopped)**: 1 cup (cooked)
- **Onion**: 1 (finely chopped)
- **Garlic**: 2 cloves (minced)
- **Carrot (grated)**: 1 small
- **Capsicum/Bell Pepper (diced)**: 1 small
- **Soy sauce**: 1 tbsp
- **Tomato ketchup**: 1 tbsp
- **Black pepper**: 1 tsp
- **Paprika/Chili powder**: 1 tsp
- **Salt**: to taste
- **Oil**: 2 tbsp
- **Cheese (optional)**: shredded mozzarella or cheddar

#### Step 1: Prepare the Dough
1. In a large mixing bowl, combine warm milk, sugar, and yeast. Let it sit for 5-10 minutes until frothy.
2. Add the egg, softened butter, and salt to the yeast mixture. Mix well.
3. Gradually add flour and knead until a soft, smooth dough forms (about 8-10 minutes by hand or 5 minutes in a stand mixer).
4. Cover the dough with a damp cloth and let it rise in a warm place for 1-1.5 hours, or until doubled in size.
#### Step 2: Prepare the Filling
1. Heat oil in a pan over medium heat. Add onion and garlic, sauté until soft and fragrant.
2. Add carrots and capsicum, cook for 2-3 minutes until slightly softened.
3. Stir in shredded chicken, soy sauce, ketchup, black pepper, paprika, and salt. Mix well and cook for another 2-3 minutes.
4. Let the filling cool completely before use.
#### Step 3: Shape the Buns
1. Punch down the risen dough and divide it into equal portions (12-15 balls).
2. Roll each ball into a small circle. Place a spoonful of the chicken filling in the center. Add cheese if desired.
3. Gather the edges of the dough and pinch to seal, forming a bun. Place the sealed side down on a baking sheet lined with parchment paper.
#### Step 4: Final Proof and Bake
1. Cover the buns with a damp cloth and let them proof for another 20-30 minutes.
2. Preheat your oven to 375°F (190°C).
3. Brush the tops of the buns with egg yolk for a golden glaze.
