### **Ingredients**
#### For the Noodles:
- Chow mein noodles (or thin egg noodles): 8 oz (225g)
- Sesame oil or vegetable oil: 1 tbsp
#### For the Chicken:
- Chicken breast or thighs (thinly sliced): 1 lb (450g)
- Soy sauce: 1 tbsp
- Cornstarch: 1 tsp
#### For the Sauce:
- Soy sauce: 3 tbsp
- Oyster sauce: 2 tbsp
- Dark soy sauce (optional, for color): 1 tsp
- Sesame oil: 1 tsp
- Sugar: 1 tsp
- Chicken broth or water: 2 tbsp
#### For the Stir-fry:
- Garlic: 3 cloves (minced)
- Ginger: 1 tsp (grated)
- Onion: 1 medium (sliced)
- Carrot: 1 (julienned or thinly sliced)
- Bell peppers (red, green, or yellow): 1 cup (sliced)
- Cabbage: 1 cup (shredded)
- Green onions: 2 stalks (cut into 2-inch pieces)

### **Instructions**
#### **1. Cook the Noodles**
1. Boil the noodles according to package instructions until just tender (al dente). Drain and rinse with cold water.
2. Toss the noodles with 1 tbsp sesame oil to prevent sticking. Set aside.

#### **2. Marinate the Chicken**
1. In a bowl, combine the sliced chicken with soy sauce and cornstarch.
2. Let it marinate for at least 10–15 minutes while you prepare the other ingredients.

1. In a small bowl, mix soy sauce, oyster sauce, dark soy sauce, sesame oil, sugar, and chicken broth or water.

1. Heat 2 tbsp of vegetable oil in a large wok or skillet over medium-high heat.

3. In the same wok, add a bit more oil if needed. Stir-fry the garlic and ginger for about 30 seconds until fragrant.
4. Add the onions, carrots, bell peppers, and cabbage. Stir-fry for 2–3 minutes until the vegetables are tender-crisp.

1. Add the cooked noodles to the wok, tossing them with the vegetables.
2. Return the chicken to the wok.
