把兩個平底鍋疊在一起，然後將鮪肚肉片放下去煎。藉由加熱手法突顯出，鮪魚鮮美濃醇的甘甜美味。若只使用薄薄一層平底鍋，冷藏過的肚肉放上去時，平底鍋的表面溫度將驟降，肚肉表面還沒來得及凝聚，內部的肉汁便會流失。把平底鍋重疊使用，則可以加強保溫力。
