蛤肉經由菜刀切細剁碎，超乎想像地發揮了做為卷壽司材料的功能。為了去除砂礫，一粒粒乾淨地切除內臟。同時為了怕它變硬，不直接熬煮入味，而將其醃漬在砂糖和醬油之中，跟台灣料理的醃蚋仔一樣。
最令人讚嘆的是，一經咀嚼，蛤肉和海苔散發的磯岩芳香，便在齒頰間擴散開來。乍看下平實不起眼，卻有股令人懷念的樸實風味，深切而沉靜的感動人心。
