豆魚的淡雅風味，加上酸橙醋的芳香，還有蝦鬆特有濃醇的甘甜，使得豆魚深藏的鮮美甘醇，都被提顯出來。依口味輕重順序，在赤身(紅魚肉)壽司之後，貝類壽司之前，約第三道左右呈給顧客食用。不過豆魚壽司要在一開始先捏製好，讓米飯和壽司料所使用的兩種醋，隨著時間逐漸融合，約10分鐘後才出給顧客食用。
