壽司的美味與否，米飯佔了六成的成敗。壽司醋飯也就是所謂的「舍利」，主要是因飯粒形狀酷似神佛的舍利子而得名。
新米柔軟好吃但水分多口感較差，相對地舊米因乾燥味道差了點，但是口感和咬勁都是一級棒，所以把這兩種米混合使用。而鹽巴則會帶出米飯的自然香甜，就像吃西瓜時要撒點鹽，道理是一樣的。
